Healthy, Vegetarian Curry

Vegetarian Curry with Brown Rice

 

Serves Two

Cooking time: 30 minutes – 1 hour

Ingredients 

  • 200g can of coconut milk
  • 100ml water
  • 2tbs madras curry paste (alternative pastes can also be used)
  • 1 large carrot
  • 1/4 broccoli head
  • 1 large onion
  • 1 sweet potato
  • 100g brown rice cooked to packaging instructions
  • pinch of salt

Method

  1. Cook the brown rice to packaging instructions in water with a pinch of salt 
  2. In a large wok or frying pan, heat the curry paste for 1 minute before adding the coconut milk and water.
  3. Chop all of the vegetables to desired thickness and add to the curry broth. N.B The larger the vegetables, the longer the curry will takes to cook. I like to keep my onions in quite large chunks, rather than finely chopped.
  4. Boil until the vegetables have cooked, for around 20 minutes. Season well and serve in a bowl.

 

 

 

Golden Milk

‘Golden Milk’ and why I am obsessed with it.

Golden milk, or turmeric milk, has been used for colds, congestion, headache,sore throats and fighting depression for centuries.

turmeric contain compounds called curcuminoids, the most important being curcumin.  Curcumin is the main active ingredient in turmeric. It has powerful anti-inflammatory effects and is a very strong antioxidant.

Unfortunately, curcumin is poorly absorbed into the bloodstream. It helps to consume black pepper with it, which contains piperine… a natural substance that enhances the absorption of curcumin by 2000%. So maybe pop a few whole peppercorns before or with your golden milk.

Turmeric:

1. helps the body fight foreign invaders and also has a role in repairing damage

2. dramatically increases the antioxidant capacity of the body

3. improves brain function and lowers risk of brain and heart diseases

4. can help prevent (and perhaps treat) depression, cancer and alzheimers

5. purifies the blood and liver

6. increases digestive health

7. can break down dietary fat

My Recipe

  • 1/2 cup coconut milk 1/2 cup almond or soy milk
  • 1 tsp of turmeric paste (1 tsp turmeric boiled with water) (or one-half inch fresh turmeric thinly sliced or diced)
  • sprinkle of cinnamon
  • Honey / mint to taste
  • Black pepper corns (do not add, just swallow)

Make the turmeric paste if not already done so.

  1. Take 1 tsp turmeric paste and a sprinkle of cinnamon and put into a small saucepan
  2. Add the milks stirring constantly
  3. When close to boil take off the heat and add honey and or mint
  4. Put into a glass or mug
  5. Swallow the peppercorns whole and enjoy your golden milk!
