Now we all know that I love a good trick to making tasty food healthy. This is no different
Now I love a good bit of Mexican food, but with the cheese, the nachos, the salsa all those calories are just adding up! So heres a tip if you’re really craving, but you don’t have to fall for to have it!
Ingredients
Tortilla
- Flour
- Oil
- Water
kneed till a dough
Filling
- Kidney beans
- Tomato Puree
- Hot sauce
Method
- When the dough is made, roll it out into a circle and heat a frying pan on a high heat.
- When the oil in the pan is hot, add the tortilla and cook lightly on both sides.
- When starting to brown add the filling into the center of the tortilla
- Fold the tortilla in half
- Warning it will cook fast!
- Wait till cooked and then cut and enjoy!
Can be eating with rice or on their own, I’ve enjoyed mine on a bed of oiled salad.

What can I say, I didn’t have any in the flat, and it makes it taste so much better! For reasons of taste and for the fact of knowing that it’s fresh and exactly what has gone into it!
