I appologise for all of the Butternut Squash recipes, at least you know where to look if you find yourself bemused with what to do with your Butternut Squash!
I have never made Tortellini before, and thought now was as good a time as any to try it! I also think i have found my new favourite Butternut Squash recipe, if not all time recipe!
Dough
- 100g fine flour (if the amount needs to be increased it is 1 egg to every 100 g of flour)
- 1 egg
Make sure the dough is rested in the fridge for at least 30 mintutes
Filling
- Butternut Squash Puree (can be roasted or boiled)
- Seasoned with salt and pepper
- Hot Oil
- Zest of Orange or Lemon
Sauce
- Oil / butter
- Sugar
- Rosemary or Sage
