It is every Harry Potter fans dream to have a Pumpkin Pasty! Settle down the the books or film and indulge in this treat!
Simple short crust pastry filled with fried Pumpkin, Butternut Squash, Onions, Carrot and Peppers spiced with cumin and coriander and a bit of Veggie stock. There’s not much else to say to be honest, other than that its tasty!
Ingredients
- Short crust pastry
- 1 cup Chopped Pumpkin
- 1 cup Chopped Butternut Squash
- 1 Onion
- 1 Carrot
- 1 Pepper
- 1/2 cup vegetable stock
- Cumin, Coriander, salt, pepper
Method
- Fry the onion till browning, then all all ingredients to a wok and cook until soft
- Roll out the short crust pastry and cut into large squares
- Add the mixture to the center of the square and pinch/roll the joinigs together
- Brush with milk or egg
- Cook in the oven until the pastry is golden brown
Granola and Raspberry Parfait
Making granola is very simple. Mix rolled oats, honey, spices (eg cinnamon) and dried fruit onto a baking tray and bake in the oven until crispy. Then serve on top of yoghurt and some kind of fruit (I chose raspberry jam) and you’ve got yourself a treat!
Butternut Squash Bread!
This bread is baked out of Butternut Squash, Carrots and Apples. Odd you say? Tasty I say!
Served just with margarine or a bit of honey is perfect. You could even add some cheese (if German cheese was nice)
